The relaxing weekend continues…

I took Friday off for a mental health day and yesterday the relaxing mood continued.  Although I did have to run into town to do a bit of shopping and had to do a bit of laundry and housework, the rest of the afternoon was spent cooking, reading, and watching a movie with my daughter.

I tried a new chili recipe from the One Ingredient Chef website: The Heartiest Slow Cooker Vegetarian Chili.

How can you go wrong with a chili that has all of these ingredients?





The seasonings included chili powder, cumin, cinnamon and cocoa powder.  I was a bit skeptical, but I’ve tried recipes from this website before and have never been disappointed, so I had faith.  I did, however, almost screw up.  Instead of adding a tablespoon of chili powder, I added a tablespoon of cinnamon, but realized my error before I stirred it in.  I was able to scrape most of it off the top!  Crisis averted!

This recipe is supposed to simmer in the slow cooker for 6 hours.  At six hours, I checked and the carrots weren’t cooked through yet.  I don’t know if this is an issue with my slow cooker or what, so I decided to move everything into a pot and finished cooking it on the stovetop.  I also added more salt, chili powder, cumin, and some cayenne pepper because I felt like it needed a bit more kick!  I loved this chili!  I thought it was very flavorful and I loved the walnuts and veggies.  My husband, however, didn’t like it.  He thought there was “too much going on” and didn’t really like the seasoning.  I will definitely be making this again, but I’ll halve the recipe and just make it for myself.

Dessert was a new recipe from the Oh She Glows Cookbook:  Fudgy Mocha Pudding Cake


O…..M……G……this stuff is incredible!  Eaten warm, topped with soy vanilla ice cream.  It was delicious!  It got the seal of approval from the hubby as well.  He may not have liked the chili, but he loved this recipe!

Finally, it was a day of reading.  I started a new Jojo Moyes book and I can’t put it down!

It’s going to be a sunny, cooler fall day today which will be awesome for my 11-mile long run I have scheduled for today!  Then tonight I’m going out with my daughters and some ladies from my book group to a drag show!  I can’t wait!  It’s going to be a blast!  What a great way to end a fantastic weekend!

  1. A great way to spend your weekend beginning with your mental health day Friday! I think I’d love that chili. I’m not vegetarian but I could be. 🙂 I just love chili! It’s great for this time of year. Hopefully you are re-charged for the coming week. Cheers! 🙂
