Active weekend!

The weekend started out with a 3.1 mile run on Friday night after work.

On Saturday, my husband and I went for a 4.73 hike at one of our local state parks.  This was our first hike of the year, as we’ve either been too busy or it has been too rainy.  It was a beautiful day on Saturday and it was so good to be out hiking again!

Besides hiking, you know what else is great about summer?  Sweet corn!  Yum!

On Sunday morning, I continued my half-marathon training program with a 9-mile run!  My longest run to date!

I’m still struggling with blisters during my long runs, so after doing some research online, I’m wondering if I need to get different socks to keep my feet dry.  I have several blisters on both feet, one of which was HUGE and I had to ask my husband to pop.  Yuck.

A soak in the home foot spa was just what my poor feet needed.

Ahhhh………my feet are feeling much better today.  🙂

Finally, I wanted to share something that I made from the Oh She Glows Cookbook:  marinated balsamic, maple, and garlic tempeh.  I’m going to put it on a sandwich tonight with lettuce and tomato.  Mmmmmm…….this stuff smells AMAZING and tastes fantastic!

Only 6 more days until the Bix-7 race!  I’m so excited!!

    1. Michele, it’s super easy! I just sliced it, marinated it, and then baked at 350 degrees for about 30 minutes. The first 15 minutes I covered it with aluminum foil, then uncovered for last 15 minutes until all, or most, of the marinade is absorbed by the tempeh. My youngest daughter thought it smelled amazing while it was baking! She actually tried a bite and loved the flavor, but didn’t like the texture of the tempeh! LOL

      1. Yum! I’m going to try it. 🙂 Tempeh and even tofu have that funny texture, definitely an acquired taste. Kudos to her for trying it, lol!

    1. I ate the tempeh for dinner last night with tomato, lettuce, vegan mayonnaise, and avocado on whole wheat toast! It was just like having a BLT! So good! So good, in fact, that I ate two. 😛 No wonder I keep gaining weight. LOL
